This Pork Chop Suey is a veggie-filled stir fry classic that's fresh, simple, and overflowing with flavour! The flavorful brown sauce with soft bits of pork, mushrooms, peppers, and more will delight you.
Servings 50 Portion: 1 ¼ cup

Ingredients
  

  • 15 lbs. Pork cubes raw 
  • 1 tbsp Ground black pepper 
  • Pinch ground ginger 
  • 2 ½ qt Water 
  • 2 cup Soy sauce 
  • ¼ cup Molasses 
  • 1 ½ gal Sliced onions 
  • 1 gal Sliced celery 
  • 1 gal Cabbage wedged 
  • 1 ¾ Corn starch 
  • 1 qt Water 
  • 3 qt Bean sprouts 
  • 1 gal 2 cup Chow mein noodles canned 

Instructions
 

  • Brown pork in steam-jacketed kettle or stock pot. 
  • Sprinkle pork with pepper and ginger. 
  • Add water, soy sauce, and molasses; bring to a boil; cover; simmer 1 hour or until tender. CCP: Internal temperature must reach 145 F. or higher for 15 seconds. 
  • Add onions, celery and cabbage to pork mixture; mix well; cover; bring to a boil; reduce heat; simmer 10 minutes. 
  • Combine cornstarch and water. Stir slowly into hot mixture, stirring constantly. Cook 3 to 5 minutes or until thickened. 
  • Add bean sprouts; mix well; bring to a simmer. CCP: Hold for service at 140 F. or higher. 
  • Serve with 1/3 cup chow mien noodles and steamed rice.
