Bayou chicken is a portion of home-style southern comfort food. It’s made with hand-selected cuts of white meat chicken deep fried to perfection and covered in our signature sweet and spicy sauce. The sauce used on the Bayou Chicken has been passed down for three generations, growing using only the finest ingredients to produce bold, rich flavors that make it stand out from the crowd.

Serve this spicy chicken with fresh greens or potatoes for a well-rounded meal.

Ingredients
  

  • 15 lbs Boneless chicken thighs 
  • 2 ½ cup Lime juice 
  • 1 cup Cajun seasoning 
  • 1 ½ cup Hot sauce 

Instructions
 

  • Wash chicken thoroughly under cold running water. Drain well. Remove excess fat. 
  • Combine lemon juice, hot pepper sauce and Cajun seasoning. Stir until well blended. 
  • Pour 1-quart marinade over chicken breasts in each pan; cover. CCP: Marinate under refrigeration at 41 F. or lower for 45 minutes. 
  • Lightly spray each pan with non-stick cooking spray. Place 25 chicken breasts on each sheet pan. Lightly spray breasts with non-stick cooking spray. Pour 1-quart marinade over chicken breasts in each pan; cover. Discard any remaining marinade. 
  • Using a convection oven, bake 12 to 14 minutes on high fan, closed vent. CCP: Internal temperature must reach 165 F. or higher for 15 seconds. 
  • Cool chicken first, then slice and store to use with recipes on campout .
