Chop Suey Pork
Ingredients
- 15 lbs. Pork cubes raw
- 1 tbsp Ground black pepper
- Pinch ground ginger
- 2 ½ qt Water
- 2 cup Soy sauce
- ¼ cup Molasses
- 1 ½ gal Sliced onions
- 1 gal Sliced celery
- 1 gal Cabbage wedged
- 1 ¾ Corn starch
- 1 qt Water
- 3 qt Bean sprouts
- 1 gal 2 cup Chow mein noodles canned
Instructions
- Brown pork in steam-jacketed kettle or stock pot.
- Sprinkle pork with pepper and ginger.
- Add water, soy sauce, and molasses; bring to a boil; cover; simmer 1 hour or until tender. CCP: Internal temperature must reach 145 F. or higher for 15 seconds.
- Add onions, celery and cabbage to pork mixture; mix well; cover; bring to a boil; reduce heat; simmer 10 minutes.
- Combine cornstarch and water. Stir slowly into hot mixture, stirring constantly. Cook 3 to 5 minutes or until thickened.
- Add bean sprouts; mix well; bring to a simmer. CCP: Hold for service at 140 F. or higher.
- Serve with 1/3 cup chow mien noodles and steamed rice.
